1 medium yellow onion
3 medium ripe tomatoes
1/4 cup olive oil
1 teaspoon sweet red pepper paste
- Snap off the stem ends and pull off the tails of the green beans.
- Peel, seed, and dice the tomatoes.
- Peel and dice the onion.
- Put vegetables, oil, red paper paste, and salt into a heavy pan over medium heat and toss it until all the ingredients mix well.
- Cover, adjust the heat to maintain a slow simmer.
- Cook until the beans are tender, about 45 minutes.
- Serve at room temperature.
